In the cellar: the whole bunches are sent to the pneumatic press and the must is fermented with its indigenous yeasts at a low temperature (12-14 ° C) in stainless steel tanks for about 30 days, little contact with the skins, no filtered and clarified by decantation.

Aging: in steel tanks on the fine lees for about six months, followed by in the bottle.

Sensory characteristics: straw yellow color, intense nose, with hints of white flowers, white pulp fruit, and ethereal, fresh, intense and savory in the mouth.
