Produced in the Oaxaca region of Mexico, Fair whiskey is made from an ancestral branch of primary-harvest "blue" corn, grown for 9,000 years in the Tehuacán - Cuicatlán valley. After spontaneous fermentation in open wooden vats, it is then distilled 2 times in all-copper Filipino stills. Aging takes place in 2nd-fill bourbon casks in the mountains of Sierra Norte de Oaxaca, where the distillery is located. This geographical location enjoys a subtropical climate, enabling slow, regular ageing for 3 years in bourbon casks in Oaxaca, then over 10 months in new oak casks in Cognac.
