This precious spice comes from the province of Tarroudant, a fertile area in southwest Morocco. Here, saffron is harvested entirely by hand, then dried and packaged on site. Tarroudant saffron is a Slow Food Presidium and contains only red pistils, the most prized and fragrant part of the flower. A 1g package is enough to prepare 25 risottos. Simply rehydrate the filaments in warm water or hot milk for about 20 minutes before using. Adding it halfway through cooking will enhance the delicate aroma and intense color.
