Organic whole grain Thai black rice (hom nin) is husked, hulled, and unpolished. It's a typical Thai variety, usually uncultivated because it's difficult to manage: it requires temperatures below 20°C (68°F) to intensify the ear's natural black color. It has long grains, a particularly aromatic scent, and an intense flavor. It's characterized by its purplish-black color and is ideal for vegetable and fish dishes, as well as for making exotic desserts.
How to useRinse under plenty of running water. The pilaf cooking method is recommended to best preserve the rice's color and micronutrients: place 3 parts water and 1 part rice in a covered saucepan and cook for 40 minutes (20 minutes in a pressure cooker) until completely absorbed. Season with salt at the end. Alternatively, place the rice in plenty of boiling water and cook for 40 minutes, season with salt and finish cooking.
